Because you loved it so much, we made some more Sa Because you loved it so much, we made some more Sassamanash to get you through the Holidays! Sassamanash combines the best British Columbia grown apples with the finest BC cranberries and hibiscus flowers. We soak our cranberries and hibiscus flowers in spirits sourced from Vancouver Island, allowing them to steep for up to a year. Once we deem the flavours, aromas and colour to be sufficiently extracted, we press these blends with our wooden basket press then add these crimson bitters to our farm-crafted cider just before bottling. The result: a beautiful light rose coloured cider with a bright, balanced acidity that is drenched in autumn sweetness. As a cider in our Canadian Invasion Series proceeds helps combat invasive plants.⁠

Many of the regions varietals are edible too! ⁠

1/3 cup brandy⁠
3/4 cup orange juice⁠
1/2 apple cubed⁠
1/2 cup cranberries⁠

Ginger Perry is back! Ginger, juniper berries and Ginger Perry is back! Ginger, juniper berries and other spices have been prized for centuries for their many uses, from herbal medicines to teas and infused spirits. Early European seafaring explorers sought new trade routes to source these spices, eventually leading to Victoria’s early tea culture. Sea Cider salutes this history with Ginger Perry, part of our Barrel Series. ⁠

To create Ginger Perry, we ferment the best of BC apples with champagne yeast, then blend it with pear juice. Then we craft ginger and juniper berries into bitters by soaking fresh cut ginger and juniper berries in spirits then combine these bitters fermented juice to age in oak barrels. Before bottling, we add a final dosage of pear juice for a hint of sweetness. #Raiseaglass of Sea Cider to seafarers and the spice trade!⁠

We're still working through our harvest haul and p We're still working through our harvest haul and pressing apples. It's always shocking just how quickly harvest season flies by. Just a few weeks ago every bin in sight was overflowing with organic heirloom apples. ⁠

We are a certified organic farm (in compliance with National Organic Standards through Pacific Agricultural Certification (PACs), a non-profit BC based organization.) Being a certified organic farm and ciderhouse, we must use preventative maintenance to protect the trees from disease. Our orchard manager maintains the health of our trees by encouraging and nourishing soil biodiversity and using compost. The soil in our orchard is the “best of both worlds” – first few feet are glacial till (good soil drainage), with a clay pan below (excellent for holding water and nutrient retention). ⁠

Saturday is here and today we want to raise a glas Saturday is here and today we want to raise a glass to barrel-aged ciders! Centuries before stainless steel tanks were available, it was common practice for cider makers to age cider in oak barrels. Our Barrel Series pays tribute to these traditional oak aging methods. ⁠

In addition, meet Pommeau, a barrel-aged cider from our Fortified Series! A Canadian twist on the European classic, Pommeau is hot to the palate with a rich nose of dried fruit. Freshly pressed snow apples are used in this cider. Once they are fermented to desired dryness, the cider is then distilled into cider eau de vie which is then blended with a juice reserve of French apple varieties grown on our Farm. The blend is then aged in bourbon barrels. The result is a delicious aperitif with bold flavours such as dried fruit, burnt sugar, oak, vanilla and honey. Raise a glass to the cider making tradition of barrel aging!

To craft Cherry Lane we slowly ferment juice from British Columbia apples to dryness using champagne yeast. The resulting cider is aged in our stainless steel fermentation tanks. Finally, just before bottling, we add a dosage of sweet cherry and sour cherry juice sourced from our farming friends on the Saanich Peninsula.
